Millet Minestrone

A hearty minestrone made with plenty of vegetables and mixed grains. With its gentle, comforting flavour, this nourishing soup is a great choice for days when you want to eat well and incorporate more beauty-focused foods into your everyday meals.



Ingredients (Serves 2)

  • 1/4 onion, cut into 1 cm dice

  • 50 g carrot, cut into 1 cm dice

  • 2 slices bacon (40 g), cut into 1 cm pieces

  • 1 tbsp olive oil

  • 300 ml water

  • 1/4 tsp salt

  • 30 g mixed grains, rinsed if required

  • 1–2 bay leaves, optional

  • 1/2 can chopped tomatoes (200 g)

  • 1 tsp soy sauce


Instructions

1. Prepare the vegetables and bacon

Cut the onion, carrot and bacon into 1 cm pieces.

2. Sauté

Heat the olive oil in a saucepan over medium heat. Add the onion, carrot and bacon, and sauté until the onion becomes translucent.

3. Add the grains and simmer

Add mixture A to the saucepan and cover with a lid. Bring to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the grains are tender.

4. Add the tomatoes and season

Once the grains are tender, add the chopped tomatoes and bring the soup back to a gentle simmer. Stir in the soy sauce, adjust the seasoning if needed, and serve.


Tips for Best Results

Cooking times can vary depending on the type of mixed grains you use, so check the texture as they simmer. If the soup becomes too thick or the liquid reduces too much, add a small amount of water as needed.


Notes

  • 1 tablespoon = 15 ml; 1 teaspoon = 5 ml.

  • This recipe uses an onion weighing approximately 200 g per whole onion.

  • We used a blend of 18 different grains, but you can use any mixed-grain blend you prefer.
