Tender Steamed Chicken with Homemade Shio Koji and a Flavorful Sauce

The shio koji resting in my refrigerator was bubbling gently again.

Whenever I see those tiny bubbles forming on the surface, I’m reminded that this is truly a living seasoning. Shio koji is one of those quiet kitchen staples that can completely change everyday cooking. It doesn’t need to be used in anything elaborate—just a spoonful can add depth, tenderness, and gentle umami to a simple meal.

This time, I used my lively homemade shio koji to make tender steamed chicken, along with a light sauce made from the cooking juices, ginger, scallion, and sesame.

It turned into one of those simple dishes that feels nourishing, balanced, and deeply satisfying.

Why Shio Koji Works So Well for Steamed Chicken


Shio koji is a traditional Japanese fermented seasoning made from rice koji, salt, and water.

When used with chicken, it adds more than saltiness. It brings out a natural sweetness, helps deepen the flavor, and makes the meat especially tender and juicy. Steamed chicken is simple by nature, but it can easily turn dry if overcooked. Shio koji helps prevent that, making it a useful ingredient for both everyday meals and make-ahead cooking.



Ingredients(For 1 Person)

For the Steamed Chicken

  • 1 chicken breast or chicken thigh

  • 1 to 1½ tablespoons shio koji

  • A few slices of fresh ginger

  • A small handful of scallions, or the green part of a leek/onion

  • 2 to 3 tablespoons sake or water

For the Shio Koji Sauce

  • 2 teaspoons shio koji

  • 2 tablespoons cooking juices from the steamed chicken

  • A little grated or finely chopped ginger

  • Scallion, finely chopped

  • 1 teaspoon sesame seeds

  • 1 teaspoon sesame oil

  • 1 teaspoon rice vinegar or lemon juice

  • A small amount of soy sauce, if needed

How to Make It

1. Coat the Chicken with Shio Koji

Pat the chicken dry and rub the shio koji evenly over the surface.

If you have time, let it rest for 30 minutes to several hours. This helps the flavor settle in and gives the chicken a more tender texture. If preparing ahead, keep it refrigerated.

2. Steam with Ginger and Scallion

Place the chicken in a pan or pot, then add the ginger, scallion, and sake or water.

Cover and cook over low to medium-low heat until the chicken is gently steamed through. The key is to avoid high heat, which can make the meat firm or dry.

3. Let It Rest

Once the chicken is cooked, turn off the heat and let it rest for a few minutes before slicing.

This helps the juices stay inside the meat and keeps the texture moist and tender.

4. Make the Sauce

Use some of the steaming juices and mix them with shio koji, ginger, scallion, sesame seeds, sesame oil, and vinegar.

The result is a light, savory sauce with a gentle fermented depth and fresh aromatics. Taste and adjust as needed. If you want a slightly stronger finish, add a little soy sauce.


How to Serve

This steamed chicken is delicious both warm and at room temperature.

Serve it over rice, alongside vegetables, on top of noodles, or simply on its own with the sauce spooned over the top. The sauce brings together the mellow umami of shio koji, the brightness of ginger, and the freshness of scallion—turning a very simple dish into something quietly special.

A Note on Bubbling Shio Koji

Homemade shio koji may develop small bubbles as fermentation continues. If it smells pleasantly sweet, mildly savory, or naturally fermented, that is usually a good sign that it is active and healthy.

However, if you notice unusual colors such as blue, pink, or black mold, or a clearly unpleasant rotten smell, it is best not to use it.

As with all fermented foods, using clean utensils and storing it properly will help keep it in good condition.

Shio koji is one of the easiest fermented seasonings to welcome into everyday cooking.

It works beautifully when you want to make chicken more tender, bring more flavor into a simple sauce, or make use of whatever aromatics you already have in the kitchen.
