Easy Homemade Amazake with a Ziploc Bag
A gentle fermented habit that supports your body from within.
Amazake is a traditional Japanese fermented drink, often called a “drinkable IV,” known for supporting gut health and immunity.
Here, we introduce a simple method using a Ziploc bag and a yogurt maker—no special equipment required.

Ingredients
150g cooked rice
200g rice koji (fresh koji recommended)
250ml water
Use a yogurt maker that can maintain 60°C (140°F).
The most important factor in making amazake is temperature.By keeping a stable temperature around 60°C, you can achieve a naturally sweet and successful fermentation.
Instructions
Cook the rice (slightly softer than usual is recommended)
Let it cool down to about 60°C (140°F)
Add the rice koji and mix well
Add water and mix again
Transfer the mixture into a Ziploc bag
Ferment in a yogurt maker at 60°C (140°F) for 6–8 hours
Tips
Keep the temperature at 60°C (140°F)
(Too high will destroy the enzymes)
Stir once or twice during fermentation for even results
Extend fermentation time if you prefer a sweeter taste
