Amazake with Ziploc

Updated: Apr 27

Amazake is a traditional Japanese fermented drink, often referred to as a “drinkable IV.” It is known for its ability to support gut health and boost immunity. In this post, I'll introduce a simple method to make amazake using just a Ziploc bag and a yogurt maker. No special equipment is required!

Why Ziploc Works

The Ziploc bag's simple, sealed structure helps reduce the risk of contamination. This allows for stable fermentation even in your home. Without rigid containers, there’s no need for alcohol sterilization. This minimizes washing and makes it easier to maintain a clean environment.

Using a Ziploc bag lets you easily see the condition inside. You can monitor and adjust the fermentation process as needed. Because this method is simple and effortless, it naturally fits into daily life. It becomes a sustainable fermentation habit.

Ingredients

  • 150g cooked rice

  • 200g rice koji (fresh koji recommended)

  • 250ml water

You will need a yogurt maker that can maintain 60°C (140°F). The most important factor in making amazake is temperature. By keeping a stable temperature around 60°C, you can achieve a naturally sweet and successful fermentation.

Instructions

  1. Cook the rice. Slightly softer than usual is recommended.

  2. Let it cool down to about 60°C (140°F).

  3. Add the rice koji and mix well.

  4. Add water and mix again.

  5. Transfer the mixture into a Ziploc bag.

  6. Ferment in a yogurt maker at 60°C (140°F) for 6–8 hours.

Tips for Successful Fermentation

  • Keep the temperature at 60°C (140°F). Too high will destroy the enzymes.

  • Stir once or twice during fermentation for even results.

  • If you prefer a sweeter taste, extend the fermentation time.

How to Know It’s Ready

You can tell your amazake is ready by checking for the following signs:

  • A naturally sweet flavor.

  • The rice has softened.

  • A gentle koji aroma fills the air.

Storage

Once your amazake is ready, store it in the refrigerator for up to one week. You can also freeze it for longer storage.

As Part of Inner Care

With simple ingredients, you can nourish your body without burden. Small, consistent habits like making amazake quietly support your daily balance and well-being. This gentle approach to nutrition can help you feel more centered and fulfilled in your daily life.

Incorporating amazake into your routine can be a delightful way to enhance your health. It’s not just about the drink itself; it’s about the ritual of making it. This small act can bring joy and a sense of accomplishment.

I encourage you to try making amazake at home. You'll find that it’s not only easy but also rewarding. Enjoy the process and the benefits that come with it!
