Upcycled Food: Rethinking What We Throw Away

The pulp left after juicing fruit.

The grains left behind after brewing beer.

The grounds left after making coffee.


Food production creates far more than the products we eventually see on store shelves. Along the way, it also generates a wide range of by-products—many of which have traditionally been treated as leftovers or waste.


But what if these materials were not waste at all?


That question is helping drive growing interest in upcycled food: the practice of turning food by-products that might otherwise be discarded into ingredients for new products.


And this is about more than simply reducing waste. It is also about creating new products—and potentially new markets—from materials once considered to have little or no value.



How Much Food Are We Throwing Away?

According to the United Nations Environment Programme (UNEP) Food Waste Index Report 2024, around 1.05 billion tonnes of food were wasted worldwide in 2022.


That is equivalent to roughly 19% of the food available to consumers.


It is important, however, to distinguish this figure from the by-products generated during food manufacturing. The UNEP estimate primarily covers food waste from households, food service and retail.

Meanwhile, food processing produces its own stream of by-products—from fruit peels and seeds to juice pulp and spent grains—many of which may still have potential value.


And that raises a different question:

Instead of asking, “How should we dispose of it?”, perhaps we should be asking, “Is this really waste in the first place?”



What If Brewing Leftovers Could Become Food?

Brewing beer leaves behind a substantial amount of grain after sugars and other soluble components have been extracted from the malt.


Known as brewers’ spent grain (BSG), this by-product can be dried and processed into an ingredient for foods such as bread, crackers and snacks.


The same thinking can be applied to juice production. The pulp and peel left after fruit is pressed can still contain valuable components, including dietary fibre.


So why throw them away? Could they become ingredients for something new instead?


Across the food industry, materials long regarded simply as “by-products” are being reconsidered as potential food ingredients in their own right.



Upcycling Is About More Than Reducing Food Waste

What makes upcycled food particularly interesting is that it is not simply about reducing food waste.


Not throwing away unsold bread.Discounting products as they approach their best-before date.Taking home what you cannot finish at a restaurant.

All of these actions matter.


But upcycling looks further upstream—at the food production process itself.


What if the materials left behind during production were designed back into the system as valuable resources?


In other words, the thinking is shifting from:

“reducing waste”

to

“rethinking what we consider waste in the first place.”


And that is where the idea becomes truly interesting.



What Does Food Waste Have to Do with Climate Change?

Throwing food away is not simply a question of creating more rubbish.

According to UNEP, food loss and waste account for an estimated 8–10% of global greenhouse gas emissions.


Long before food reaches our plates, resources have already gone into producing it—from land, water and fertiliser to the energy required for processing, refrigeration and transportation. When that food is never eaten, much of what went into producing it is effectively wasted too.


There is another issue. When discarded food decomposes in landfills, it can generate methane, a powerful greenhouse gas.


This is where upcycling may offer another opportunity. If by-products from food production can be turned into ingredients for new products, we may be able to extract more value from resources that have already been used.

But there is an important caveat: upcycling does not automatically mean a smaller environmental footprint.


Drying, processing, transporting and packaging a new food product all require energy too. The overall environmental impact depends on how the entire process is designed.

So perhaps the real question is not simply, “How can we stop throwing things away?”


It is:

“How much more value can we get from the resources we have already used?”

That shift in perspective may prove just as important as the products themselves.



When “Waste” Becomes a Business Opportunity

For businesses, upcycling opens up another possibility.


Materials that once cost money to dispose of could potentially gain value as ingredients for new products, creating a very different cycle:


disposal cost → ingredient → product → revenue


But this is where the real challenge begins.

Being better for the environment is not enough to keep a food product on the shelves.


Does it taste good?Is the price right?Would you buy it again?


These are the questions that ultimately matter to consumers.

The next stage for upcycled food, then, may be about moving beyond the label of a “sustainable product” and proving that it can compete on the same terms as everything else on the shelf.


Can it become something people choose not because it is upcycled, but simply because it is good?


Could the Next Big Food Hit Be Hiding in What We Throw Away?

For years, the food industry has searched for better ingredients. But the ingredients of the future may be hiding somewhere entirely different.


In the corner of a factory.In the pulp left after pressing juice.In the grounds left after making coffee.In the grains left after brewing beer.


In other words, in what we have long thought of as “leftovers.”

The assumption that creating something new always requires new resources is beginning to change.


What if we could create products that do not yet exist from resources we already have?


The next big food hit may not come from a new field or a newly discovered ingredient.

It might be waiting just before the bin.
