Apple & Shio Koji Canapés

Shio koji-marinated apple slices are placed on toasted baguette slices for a simple yet elegant appetizer.

The sweetness of the apple, the gentle saltiness of shio koji, and the aroma of olive oil come together beautifully. While apples are often associated with desserts, pairing them with shio koji creates a savory bite that works surprisingly well as a starter.

Made with just a few ingredients, these canapés are perfect for an aperitif, casual entertaining, or a light snack before a meal.



Ingredients

  • 1 apple

  • Baguette slices

  • 1–2 tsp shio koji

  • 1 tbsp olive oil

  • 1–2 tsp lemon juice

  • Fresh parsley, chopped

  • Freshly ground black pepper

Instructions

  1. Wash the apple and slice it thinly, leaving the skin on.

  2. In a bowl, gently toss the apple slices with shio koji, olive oil, and lemon juice.

  3. Let the mixture rest for 10–15 minutes.

  4. Slice the baguette and lightly toast if desired.

  5. Arrange the apple slices on top of the baguette.

  6. Finish with parsley and freshly ground black pepper.



Tips

Slice the apple as thinly as possible for the best texture and presentation. Since shio koji varies in saltiness, start with a small amount and adjust to taste.
