Creamy Corn Soup with Soy Milk | Creamy & Dairy-Free

This comforting corn soup combines the natural sweetness of corn with the smooth, creamy texture of soy milk.

Simply combine the ingredients in a saucepan and heat gently. Perfect for busy mornings or whenever you need a quick and easy side dish. Made with soy milk instead of dairy milk, this soup also provides plant-based protein.

Ideal for breakfast or lunch, this versatile soup is also a great addition to bento lunches and hotel breakfast buffets.

Ingredients (Serves 2)

  • Canned cream-style corn – 200 g

  • Soy milk – 200 ml

  • Granulated bouillon – 1/2 tbsp

  • Whole kernel corn – To taste

  • Parsley – To taste

Instructions

1. Combine the Ingredients

Place the cream-style corn, soy milk, and granulated bouillon in a saucepan. Mix well using a whisk or wooden spoon.

2. Heat Gently

Place the saucepan over low heat and warm the mixture slowly, stirring occasionally.

Avoid bringing the soup to a boil, as soy milk may separate when heated too quickly or at high temperatures. Continue heating until the bouillon has dissolved and the soup is warmed through. 3. Serve and Garnish

Ladle the warm soup into serving bowls and add a small amount of whole kernel corn.

Finish with a sprinkle of chopped parsley and serve.

Tips for the Best Results

Avoid Boiling the Soy Milk

Heating soy milk at high temperatures can cause its proteins to coagulate, resulting in separation. Gently warming the soup over low heat helps maintain a smooth, creamy texture.

Bring Out the Natural Sweetness of Corn

Some brands of cream-style corn contain added sugar or salt. Taste the corn mixture before adding too much seasoning, and adjust the amount of bouillon accordingly.

For an Extra-Smooth Texture

If you prefer a smoother soup without corn kernels, blend the mixture until creamy before heating.

Notes

  • 1 tablespoon (tbsp) = 15 ml.

  • This recipe uses canned cream-style corn.

  • If cream-style corn is unavailable, you can blend whole kernel corn into a smooth purée as a substitute. Adjust the amount of soy milk and seasoning as needed, as the texture and flavor may vary.

  • Unsweetened soy milk is recommended. If using sweetened or flavored soy milk, adjust the seasoning to balance the sweetness and flavor.

Beauty and Health Benefits of Soy Milk and Corn

Soy milk is a source of plant-based protein derived from soybeans. Protein is an essential nutrient that helps maintain body tissues, including the skin and muscles.

Soybeans also contain isoflavones, a type of polyphenol. While research continues to explore their potential health benefits, there is no need to consume excessive amounts of isoflavones for beauty-related purposes.

Corn, on the other hand, contains carotenoids such as lutein and zeaxanthin, natural pigments responsible for its yellow color. These compounds are also found in the macula of the human eye, where they play an important role in maintaining eye health.

Combining soy milk and corn creates a comforting soup that provides plant-based protein while allowing you to enjoy the natural sweetness of corn.

However, this soup alone cannot provide all the nutrients your body needs. Pairing it with bread, eggs, or a fresh salad can help create a more balanced breakfast or lunch.
