Recipe for a Blue Drink Using Herbs

Blue drinks made with herbs are not only visually appealing but are also considered beneficial for health. The blue hue is typically derived from herbs such as blueberries, butterfly pea flowers, lavender, and blue mallow.

These herbs are known to contain antioxidants and anti-inflammatory properties, making blue drinks increasingly popular in today's health-conscious society. In this article, we will introduce blue drinks using these herbs. Butterfly pea flower and blue mallow are particularly recognized in the world of natural remedies for their "eye-friendly" properties.

Using the Popular Butterfly Pea Flower recipe

Butterfly pea flower, popular for adding a blue hue, is not limited to herbal teas and food recipes when it comes to showcasing its versatility.

By steeping butterfly pea flowers in gin for three hours, a vibrant blue colour can be extracted. In this instance, we have created a recipe using gin, but personally, I believe vodka would be delicious as well.


The image may appear somewhat purplish, but a rich blue colour like this can be extracted. There are two flavour options: lemongrass and orange.

If you prefer a dry taste, you can enjoy it as it is!


  • 3 teaspoons of butterfly pea flower

  • 1 bottle (250ml) for extraction

  • 1 slice of orange

  • Half a stalk of lemongrass, cut in half

  • Sparkling water


  • Pour gin into the extraction bottle until it reaches the top, then add the butterfly pea flower.

  • Let it steep for 3 hours, occasionally checking the colour to see how much has been extracted.

  • If you prefer a sweeter taste, you can add syrup or mix it with 7UP (similar to Sprite) for a balanced sweetness.

  • Note: The term "7UP" may be used to refer to a lemon-lime soda with a similar flavor profile to Sprite in some regions.

It is a herb with flowers that quickly release their colour, spreading a refreshing blue hue in an instant when steeped in a teacup. Since it is tasteless and odourless, it pairs well with any recipe.

When adding citrus juices like citric acid are to the butterfly pea flower, it changes colour to purple. If you want to serve a unique alcoholic beverage, you can start by pouring butterfly pea flower-infused gin or other alcohol into a glass, then add lemonade and finally carbonated water. This combination will transform into a stylish drink with three different colours.

Blue Mallow

Blue mallow can also produce a blue colour but tends to change over time. It is recommended to use it promptly.

The blue from blue mallow has a slightly deeper shade compared to the butterfly pea flower. Like butterfly pea flowers, blue mallow is also tasteless and odourless, making it ideal for herbal blends.

As mentioned before, the colour doesn't last long, so it's best to create drinks in real-time recipes, especially in bars. The colour extraction process doesn't take much time, so even with high-concentration alcohol, it is fine to extract the colour in real time.

One characteristic of blue mallow is its slightly viscous texture. The higher the temperature of the water, the more viscosity it will have. If you prefer a smoother texture, it may be best to make the herbal tea with water that is not too hot.


As mentioned earlier, it was explained as a blue herbal tea, but it can be more accurately described as a yellow-greenish blue. It may be difficult to discern in the image, but this herb also produces a distinct colour.


It is a flowering herb with a delightful aroma, making it highly recommended for herbal teas for customers. It offers a flavour that can be enjoyed even on its own. When using it in recipes, I recommend creating a recipe that allows the rose scent to be enjoyed.
